Our origin

A family oil from southern Spain.

Salar lies in the heart of Andalusia, in the province of Granada. The Romans called the village “Salebrus” — a name tied to olive growing for two millennia. Our oil is made from Hojiblanca and Picual, two of Spain’s most characterful varieties. The result: intense fruit, notes of fresh grass and green almond, and a fine, peppery finish.
